Oh...you mean professionally, USDA approved method canned corn can develop botulism? Go figure.
It's all the home canned stuff that's the REAL risk, isn't it?![]()
I got two cases of home canned garden sweet corn put up, it's delicious too. How does botulism happen? I mean I don't know how anything could survive the processing of canned corn. It's sterile jars, boiling water, salt and then a go in the pressure canner. Seems to me that would kill most any kind of bateria, don't you think?
I dont can my corn. I blanch it then put it in vacuum sealed bags and freeze it. I hardly buy any veggies in the store.
