What is the best way to maintain 72* for 18 hours?

I do plan to keep working with good milk. I am hoping to find some good cows milk, but goat milk is so much easier to find!
I am glad to know that I can play around with cheap milk when making cheese though, I would rather throw away a crappy batch of $6 milk cheese than $12-$40...

One question.....why alternate with warm and cool water baths for the milk? Can't you just use a cool water bath, maybe even with some ice added to cool the milk down more quickly?

The temp on it is about 150* per the manual.
I have been using it a lot lately for lots of herbs form the garden, lavender flowers and we just did a batch of strawberries, they are yummy!
