I've mostly mastered cooking for two. We rarely have leftovers, and generally don't like eating them the next day anyway. If I make chili, Italian beef, or a soup, I will either put the extra in the freeze dryer or the freezer. Leftovers seem so much better when you pull them out a couple...
Looks great! Yes, that is the process we went through as well. Rehydrating the bread in a wet paper towel worked well too. I was surprised. We used a cheap loaf of bread for this process so we didn't save it, but I wanted to test out the rehydration process.
I'm making a big pot of chili this afternoon. I love having containers of chili to pull out of the freezer during the colder months of January and February. It will be dinner tonight.
Also making gravalax for New Years. It takes a couple days to cure.
We had prime rib, baked pots, asparagus and mushrooms au poivre yesterday. We'll make tacos with leftover beef and mushrooms today. Homemade tortillas, roasted chilis and some avocado. The perfect street taco.
Italian beef sandwiches and then off to a Christmas party. I'm sure there will be plenty of hors d'oeuvres and snacks there, but I prefer to eat something healthy before I go.
