1st time making homemade pasta

I'm so proud of myself and my belly is so full! :ya I made homemade pasta tonight for dinner. I had bought a pasta roller/cutter off of overstock.com awhile ago and hadn't used it. I brought it out today cuz I was stressing about money and cooking helps me relax.

It was so yummy and so was the homemade spaghetti sauce I made that everyone scarfed down! I'm going to start looking for a pasta-dryer...

Awesome!! Congratz!! My mom has one of the Kitchen Aid noodler maker add-ons but we haven't used it yet.. we'll have to try it soon!

Mmmm....That sounds delicious! I've only made pumpkin gnocchi, but that doesn't really count. Homemade pasta is on my distant culinary to-do list :)

:clap Sounds great ! Remember those metal kitchen towel racks that had a bunch of short arms that swing out to hold the towels? I bet one of those could dry quite a bit of pasta.

I remember my first homemade pasta!! I made lasagna and I couldn't believe how light and delicious it was. So completely different from store boxes. I made the dough, rolled and cut with a knife.

I now make it occasionally with my Atlas pasta machine. I say occasionally because it is so good and I eat too much of it! :drool

I dry it on anything I see: clothes hangers, backs of chairs, over cereal boxes, around the edge of my large hot water bath pot, around the edge of the plastic clothes basket. :p

I have kitchen string strung between the cabinets on either side of my kitchen window where I dry mine. My favorite homemade pasta is spinach lasagna noodles-oh my!

To be honest, I wasn't overwhelmed with love for these, but I think if I got way more garlic, salt and Parmesan on them it would have been excellent. My kids, however, would not stop eating them! So, hey, what a great way to get pumpkin into children!

Pumpkin Gnocchi With Sage ButterItalian Food Forever
1 (15 oz.) can pumpkin puree (or 2 cups fresh, cooked)
salt & pepper
dash of nutmeg
2 cups all-purpose flour
1/3 cup melted butter
6-7 finely chopped sage leaves
1 large clove garlic, minced
freshly grated Parmesan cheese

Directions:
1. Mix together the flour, pumpkin and seasonings to make a soft dough.
2. Add additional flour if the dough is sticky or does not hold together.
3. Divide the dough into 6 parts, and on a lightly floured surface, roll each piece into a rope about 1 inch in diameter.
4. Cut the rope into 1 inch pieces and roll each lightly along the floured surface.
5. Continue using up all the dough in this fashion. Place on a lightly floured baking sheet. You can refrigerate the gnocchi until you are ready to cook them.

Sauce:
1. Bring a large pot of lightly salted water to a slow boil.
2. Place the butter in a small saucepan and heat.
Add the garlic and sage.
3. Cook the gnocchi in lightly salted boiling water for until the gnocchi rise to the surface and float.
4. Remove from the water, mix with the butter sage sauce, and serve topped with the freshly grated cheese.

I used to LOVE gnocchi but the store-bought frozen version is made with potatoes, which I am now allergic to.....plus I don't "do" white flour anymore. So imagine my absolute delight at this recipe!!! Thanks!

One question, having never made gnocchi....are the pieces really 1" x 1"? Sounds huge. When you roll them in flour, are you flattening them a bit into squares? Or are they little cylinder shapes? Wouldn't they take forever to cook?

I have some whole kamut berries with pumpkin gnocchi written all over them now!!! :drool
