Oh boy. Recipes again. LOLOL. Okay.

From Elanas Pantry :

Gluten Free and Dairy Free Cranberry Nut Bread

cup coconut flour
1 teaspoon celtic sea salt
1 teaspoon baking soda
5 eggs
cup grapeseed oil
cup agave nectar
1 tablespoon vanilla extract
1 cup cranberries, frozen
cup walnuts, chopped

In a medium bowl combine coconut flour, salt and baking soda
In a large bowl blend eggs, grapeseed oil, agave and vanilla
Blend dry ingredients into wet, then fold in cranberries and walnuts
Pour batter into a greased 8.5 X 4.5 X 2.5 inch loaf pan
Bake at 350 for 50 minutes
Cool and serve

I use an extra 1/4 cup oil and only 1/4 cup sweet. I use honey instead of agave.

I use smaller tins as I think it cooks more evenly.

If you use the cherries instead of cranberries, use about 1/4 cup less oil as they're very wet.

Auntie made the pumpkin cheesecake... It was almond meal, coconut flakes, and melted butter mooshed into a pie pan and baked until golden.

Then a couple 8 oz cream cheeses, about 2 cups cooked squash (was this one acorn or pumpkin?)... a bit of honey cuz I don't like splenda... Some orange flavoring... TONS of pumpkin pie spice....

Bake for about an hour at 350. Let cool. Add whipped cream.

For fun, here are all my published recipes ... PLEASE make and review!!! Bad reviews are great. I measure by guess so I rely on "ummm did you REALLY mean this much??" to sort me out.

And my cookbook of others' recipes . Most are low carb but these are simple ones for my learning to cook friends :)

ETA: I think the cherry pistachios would be best... nuts in the bread... cherry sauce on top. Reduce the cherries with lots of star anise.
