ACK! Kombucha bumble!

I messed up!

My usual batch is 3 quarts water, 1 c sugar, 5 black tea bags.

I did it early this morning and I must have been sleepy because I used 6 quarts of water. I just realized as I was filling the jar and had way too much to fit in!

ACK! How to I fix this? Should I just start over and pour out the wrong mixture and pour in a new correct one.

Nah. Keep it, but you may want to skim some out and add a little condensed black tea and a little more sugar.

(Honestly Dace, I don't even measure anymore.)

I'm looking to start my own kombucha (buying it from the store is so expensive! And SO loves it). I've heard that I can start a scoby from the stuff I buy at the store. Is that true? Do I have to pick a specific type, or does it matter? Thanks!

Well, Dace and I both tried it from a bottle we got at the health food market. DIDN'T work.

BUT if you would like, I can mail you a scoby "mother" and some starter tea. Just pay for the shipping.

I gave Dace her scoby and I just sent one out to Delia down in TX this morning.

I'd pour off the extra water and throw in an extra teabag and a little more sugar. No biggie.

Thanks guys. As I as pouring into my jar and the realization of my mistake hit me I just froze like a deer in the headlights....Wait! No! ARGH!

Glad to know it is not a death sentence for my scoby!
