Almond Raisin Granola Cereal

For most of the winter, I wasn't getting many eggs from my girls, and my kids were bellyaching for cereal for breakfast. So I found this recipe. It is absolutely delicious, so I thought I would share.

Just a note, I triple this recipe when I make it now, but I started out with these measurements just to try it.

3 c oats
1 c slivered almonds
3/4 c coconut
1/3 c sesame seeds
1/3 c flax seeds
3/4 tsp slat-----or salt for sun deprived peeps who can't read my typos :D
3/4 tsp cinnamon
Mix the dry ingredients together

1/4 c oil ( I am using lard)
6 tbsp maple syrup or honey
6 tbsp brown sugar
2 tbsp water
Heat up to melt the lard and dissolve the sugar. Then toss on dry ingredients to coat.
bake in oven at 250F for about 40 minutes to an hour, and stir occasionally.

When done, mix in1 cup of raisins. Enjoy with milk or yogurt.

My hubby thinks this is so good, he thinks I should sell it. I'm happy, because there are wholesome ingredients in it.

I bet you could sub any type of dried fruit.

Question, by coconut, you mean the shreds, right? Not a big fan of the texture of coconut... maybe use coconut oil for the oil & leave out the coconut... Hmmm, I wonder about soaking the oats, then drying them...

Got my gears turning, good recipe!

Yes definitely. My dd, who is not a big fan of raisins, still likes it,but I am also dehydrating apples for my next batch. I think you could switch it up a bit.

I'm sure you could use coconut oil in it and leave the coconut out. the original recipe called for vegetable oil, and I switched it out for lard. If you're gonna leave out the coconut, increase on of the other dry ingredients so you get the right consistency.

I probably shouldn't admit this, but my brain is so starved for sunlight it is not functioning normally. I almost posted to ask what slat was.:rolleyes:
