anyone ever can pickled onions?

Not the little cocktail-type pearl onions, but like you'd make in the fridge, just thick sliced onions with vinegar etc.

I love 'em 'fresh' (in fridge) but am hesitant (also lazy) to go to all the work of canning if they'll just get all mushy or something.

Anyone know?

I lived in the south for over 35 years. I have had pickled onions and loved them. I have had pickled everything even watermelon rinds! My best friend's mom growing up was an avid pickler!

It can be done, but I am sorry, I don't have a recipe.

Just use a standard refrigerator pickle recipe and leave out the cucumbers. The red onion slices in the refrigerator pickles are my favorite part :D

They wont be shelf stable, but I bet they would last a long time in the fridge.

Sorry, let me clarify -- I already make onion pickles all the time, have done for years -- what I'm wondering is, can I can them (waterbath-process them in jars) for storage, without them getting all mushy?

(e.t.a - yup, pickled watermelon rinds are really good! :))

Why not try a jar in the microwave for 10-15 min, invert to can, and then test them out later to see about the texture?

Maybe if you brine soak them first...then just put the hot pickling juice over them, and NOT process them. I would think onions would get soft, and fast. I dont know, I have never had pickled onions. :idunno
