Bacon wrapped jalapenos

I saw this on Pioneer Woman and since it involves bacon, I gotta try it!
I might cook them on the grill.


Fresh Jalapenos, 2-3 inches in size
Cream Cheese, softened
Thin (regular) bacon, sliced into thirds

Cut jalapenos in half, length-wise. With a spoon, remove the seeds and white membrane. Smear softened cream cheese into each
jalapeno half. Wrap jalapeno with bacon piece (1/3 slice). Secure by sticking toothpick through the middle. (At this point, you can freeze them, uncooked, in a Ziploc bag for later use.)

Bake on a pan with a rack in a 375-degree oven for 20-25 minutes. You dont want the bacon to shrink so much it starts to squeeze the jalapeno. If, after 20 minutes, the bacon doesnt look brown enough, just turn on the broiler for a couple of minutes to finish it off. These are best when
the jalapeno still has a bit of a bite to it.

One of my friends in Houston used to make something similar. Only she cooked the bacon and mixed it with her homemade goat cheese and stuffed jalapenos. YUM!

We call them "Atomic Buffalo Turds". This what they look like when I make them in my smoker. MMMmmmmMMM GOOD!!! I also add a little garlic, onion and dried tomato to the cream cheese before I stuff them.

My ex used to make them but he used chunks of sirloin instead of cheeses.

A tip, use a skewer and slide a bunch on one skewer so you wont have to turn them one at a time.

They smell so wonderful on the grill!!

Wow...those look awesome.

DH can't eat jalapeo though. Maybe I look for a different type of pepper.
