Bell peppers?

Ok, I have one little bell pepper plant in my garden that made it. (Bad spring in New England!)

I have maybe 6 peppers that appear to be almost ready to pick. How can I make the very most of these?

If you want to save them and use them throughout the year you can chop them up or cut them in slices, or some of both, place them spread out on a cookie sheet, set them in the freezer for a couple of hours until they are completely frozen, transfer them to a ziplock bag or some other container in the freezer and then just use them for cooking when you want. By freezing them on the cookie sheet first it keeps them from sticking together and makes it easier to just reach in and grab a handful out of the bag.

BTW, just wanted you to know, this is exactly what I did... I managed to get an entire zip-lock bag of sliced bell pepper!

Next year, I will plant more of them.... ;)

I freeze all my peppers this way. Bananna, pimento, etc. The bags sit in the door of my freezer at eye level so I always have easy access to them.

Yea, I even have a nice little bag with a couple diced and just begging to be added to an omelet made with some of the back-yard girl's finest! ;)

Last year I managed to save so many peppers that we had them last til just before this year's plants started to produce. And we had peppers and onions often! I did end up using some dehydrated peppers eventually, but it was nice having those frozen ones. I have already frozen at least 3 gallon worth.
I am also trying to dehydrate as many as possible. I grow bell peppers and gypsy peppers. the gypsy peppers have more flavo and are sweeter. They also have thinner walls. The dehydrate extremely well. I like using them in sauces and soups. I just snip them up with the sissors, add some hot water, let them sit for a few minuts and then add the liquid and the peppers to my sauce.

I want to dry enough, so I can send them to my parents and DS for christmas.
