Besides cheese, what else can I do with excess milk?

I went to the gorcery store, and bought milk as usual--two bags of three litres each. Normally milk is a nobrainer, since my kids go through it so fast. when I got home and put the milk away, there was still two bags in the fridge, so apparently my kids have not been drinking milk.

So, any ideas what else I can do with it?

Jup, freeze it, that what my mother used to do. It chrystalizes, and doesn't taste quite the same when you thaw it, but it is still perfectly usable for cooking and such IMO.
Before you freeze it you might make some pudding for a nice snack. Or you could make yogurt. I also feed milk to my chickens over old bread.

Cajeta or milk fudge, coconut custard pie (uses a lot of milk and eggs, but is pretty healthy) crepes use a suprising amount of milk.

I am not a fan of frozen and thawed milk. I have tried it and don't like the flavor. Of course my milk is raw.

Thanks, I was thinking more along the lines of cooking/baking with it. I'll freeze it if I have to, but..... the coconut custard pie sound delish, and I'm having company from Germany early next week, I think that is just what the doctor ordered.

I've always steered away from crepes, but I just might give them a try,considering. I have yogurt going right now.

Tomorrow is going to be a rainy day too, so now that all my housework is caught up--tomorrow will be spent messing up the kitchen again. :D

Crepes are really easy. It is just really thin pancake batter and you're making a bigger pancake. And they are so good with either savory or sweet fillings.
Your german company might be able to show you how to make them. I was born and raised in Germany, and that is how we made "pancakes", they were served with preserves in the middle and powerdered sugar on top, for sunday breakfast.

Unfortunately, the comapny is only staying long enough for supper and a visit, or that might be an option. If I am feeling adventurous, I will try them tomorrow. :)

I have a couple "supper" crepe recipes with different vegetable fillings. Not to beat the crepe idea to death...

Homemade ice cream uses a lot and is an excellent company-is-coming treat.

Same with homemade pudding.

I love crepes!! Savory with spinach, or mushroom and sausage etc. What are your supper crepe recipes? Can you post on their own thread?

I always used to freeze milk when I found some on sale. When I was in high school, I read that in Siberia (I think) they sold milk in frozen form.

Honestly I never tasted a difference, but I have a very "rustic" pallet. I just let it thaw in the fridge over night and shook it a bit to help it thaw.

I love the ice cream idea!!

I freeze milk and no one has ever mentioned it tasting different.

Also on the crepes...plan an entire batch to play with. it takes a bit of practice to get it right. I use a small frying pan with a decent amount of butter, 1 -1 1/2 oz of crepe batter...just enough to coat the pan..cook for 30seconds, flip then cook for another 10 or so...then turn out onto a plate.
they are easy but can be frustrating at first.
