2 cups milk
4 eggs
3/4 cup biscuit mix
1/4 c butter softened
1 cup grated parmesan cheese
1 cup chopped broccoli florets
1 cup cooked cubed ham
8 oz shredded cheddar
Preheat oven to 375F lightly grease a 10 inch quiche pan
In a large bowl, beat together milk, eggs, biscuit mix and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and cheddar. Pour into quiche dish.
Bake in preheated oven for 50 minutes until eggs are set and top is golden brown.
Side note: change up the veggies and ham, the recipe is very forgiving. also the last time I made it, I forgot the butter and it was just fine.
DACE, you mentioned on the other thread that your kids don;'t like eggs for breakfast. Mine aren't big fans either, but this they seem to like--the only thing is my ds would prefer to not have vegetables in with his eggs. I double this and put in an 8x12 casserole dish--the leftovers are better than when it actually comes out of the oven IMO. It does not taste eggy at all.
ETA, the biscuit mix is a bisquick type recipe, it has been posted on here before. I'll try to find it.
