Brandied fruit Question

I made some pear brandy.The recipe said to take ripe pears and place them in a jar with sugar and some vanilla. Then pour the brandy on top of the pears. Then, let them sit for a few months. And, your suppose to shake them periodically, so that the sugar dissolves. When I went to shake them today I noticed that the pears are floating in the jars. Some of the fruit is sticking up out of the brandy and not covered by the alcohol. Is it alright that that happened? Should I have filled the jars up completely?I left about 1in headspace in the jars.

If the fruit is just floating in the liquid, it should be ok, the sugar and alcohol would have penetrated the fruit and prevent spoilage.

I learned to make rumtopf from my grandmother and it was one part fruit, one part sugar and one part rum. Keep adding to it and let it sit til thanksgiving. The fruit often ended up floating in the liquid.

Not knowing your excact recipe I would think that unless you see obvious signs of spoilage, like mold, it should be ok. I have never seen mold on the rumtopf I made.

Ha- I could always use more "taste-testers" I love making this stuff. I did it a few years ago too. I just don't remember the fruit floating last time. I can't wait until its finished. Mmmm...brandy.
