Buff's Totally Awesome Chicken Stew!

Ingredients
1 Quart and a Pint of Chicken Broth
1 Pint of Water
2 Cans of Cream of Chicken Soup
2 Cups(ish) of Chopped Cooked Chicken
1 Quart of Mixed Vegetables (Peas, Carrots, Corn, Cabbage, Tomato, Potatoes)
3 Medium Potatoes (Cubed)
1 Small Onion (Diced)
Half Pint of Heavy Whipping Cream

Sage to Taste
Poultry Seasoning (Optional) to Taste
Salt and Pepper to Taste
Onion Powder to Taste

Directions

In a large pot empy the broth, water and chicken, and bring to a boil. Stir in the potatoes and onions. Continue to boil. After around 5 minute add the mixed veggies, and cream of chicken soups. Simmer for 15 minutes. Begin seasoning, and add whipping cream. Simmer for a couple of minutes. Then the masterpiece is done.

I actually made this out of my head today and it was divine!!! We are having it for dinner tomorrow night (b/c tonight me and sis were gone to Dads and we are going somewhere tomorrow) , and I was using up last night's roasted chicken. It is amazing, the cream is what makes it good. This is thinner than really thick stew, but oh so good. :drool

Rats, you answered my question! I never keep cream in the house (well, not at the moment ;) ) and was wondering if I could just add a little milk + corn starch or something. Now I'm going to have to go to the store for some cream, so I can try this BB :D

We usually don't either but I had some that I didnt make butter from, and I just through it in there for the heck of it. It's good you should make some, even my stubborn picky sis liked it

Interesting, we're not into creamy soups much - except those with cheeses added. Sounds good though with all the fresh stuff.

Their the kinds I crave. It is good, all of it was home grown except the raw taters, and cream

For anyone who, like us, doesn't buy canned soup--you can substitute a homemade version :

Cream of Chicken Condensed Soup Recipe

Grind: 4 T of any white bean (lima, navy, etc.) to make 5 T bean flour
Combine: 5 T bean flour, 1 c. water , 4 t chicken bouillon into a saucepan
Cook: On stovetop at medium temperature until thick and delicious (whisk frequently).The soup should cook in 3 minutes! (this may be longer if your grinder makes a very coarse flour).

Use this with cooked veggies and or meat for a complete meal. You can also add this to recipes calling for cream of chicken soup cans (I have found this replaces a can plus the water or milk in recipes).
We use organic chicken bouillon granules from the natural foods store :)

Capital "T" is tablespoon, lowercase "t" is teaspoon (in most recipes anyway). Whenever I've made it that way it works out just fine :)
