Canning Collard and Mustard Greens

Winco had these greens at 10 cents a bunch and I loaded up on them because I had seen recipes for canning collard greens and ham. Now I can't find the recipe for the combo. Could use some guidance. Do I have to roast the ham first, or can I cut it up raw? (It's smoked, of course.) Suggested seasonings? I know greens are low acid and will require pressure canning, but I am not really sure of the recipe to go in the jars !

Well, I had to wing it. Maybe you all don't know the answer to my question. Anyway, DGD and I canned 7 quarts each of mustard and collard greens with ham and onions and a bit of salt. It wasn't what I had hoped for, but it was all I could figure out. I had thought there was a recipe with potato cubes, but I may be wrong.

Never even thought about canning collards, turnips or mustard greens. Now you have me wanting to give it a try. Can you post your recipe?

Pretty much as I posted...washed and cut up the greens, removing stems. Wilted in boiling water. Loosely filled quart jars, then pressed down slightly to add 1/3 cup chopped onion and six or eight one inch chunks of ham and 1/2 teaspoon salt. Pressure canner for 90 minutes. They smell amazing !

I had a ham from Winco, 15 pounds for $10, so the extra ham I cubed and canned , then roasted the meaty bone. Will make pink beans and ham to can as soon as I get more jars.

That's pretty much what I would've told you to do. They are probably going to be very yummy! I add them to all my canned soups and stews that I want something green in because they hold up nicely in the 90 minutes it takes for the meat.

Sorry I missed this earlier.....I was in a hurry and had two dogs fighting for my lap! And one of the cats, too!

Thanks for the recipe and the video link. Can't wait to try this with the left over ham I know I am going to have from Thanksgiving.
