Canning Meatloaf Questions

I know somewhere here someone mentioned canning meatloaf.

I just don't know who or where.

I have done some online research and have come up with some conflicting info.

Some sites say do not use eggs or bread or cracker crumbs but other sites give recipes for canning meatloaf use those ingredients. Whats the deal with eggs and bread?

Which is it? Or does it really matter if you process in a pressure canner for 75 min (pints), 90 min (quarts).

Any recipes floating around here for canned meatloaf?

I can meatloaf using the recipe on www.canningusa.com and it is very good. You don't need the binders when you can it, so it is just the meat and flavorings like onion, garlic, and herbs. Use VERY lean meat since all the fat will go to the top of the jar and you will have to scrape it off anyways.

A half-pint jar is perfect for one sandwich.

Thank you - I thought it was you that canned meatloaf but after repeated meatloaf searches I just came up with way to many journals and post to wade through.

Now I need to know (because inquiring minds really need to know) why you do not need the binding agents? Does the meatloaf canned act differently and just bind together? (maybe I should just do this like I did the quiche and just get over that fear of doing something new) LOL (I am such a woose).

I'm not sure why, but it works! It must be the pressure canning that does it. Those little cylindrical meatloaves shrink right up in the jar and are nicely compressed. Really slicable. They will be floating in a really yummy broth and topped with the fat from the meat.

Next time I make them, I am going to ask the butcher to grind some grass-fed beef and not add any fat like they usually do. Or I could just grind up eye-of-round roasts myself for a very lean meat, and add some ground up pork loin. Yum.

Free you are a wealth of info. I can't wait to try this. Will be shopping for hamburger meat this afternoon.
Wish I had a meat grinder. Guess that will be my next quest.
