Canning Q....some jars did not seal

I canned 4 pints each of Beef and Chicken stock yesterday. Pulled them out at about 3pm and left them to cool on the counter with a towel on top.
This morning as I cleaned off the jars I noticed that two had not sealed...I think I overfilled them.

Since they sat out for 19 hours are they still ok to put into the fridge or do I need to toss them?

I think that's sort of a judgement call. Myself, I'd just pop them in the fridge and boil 'em up with some veggies etc for soup for dinner or tomorrow's lunch, and call it good. In principle the only 'bad bugs' they should have gotten are anything that snuck in thru the incomplete seal after leaving the canner, which to my mind is not a big risk over less than a day.

But if you are really paranoid about food poisoning I could see where a person might just pitch them - nobody would make fun of you for it even if we wouldn't do it ourselves :)

To me it would depend if the house was cool or not. In the house with the AC running. I would shove it in the fridge or either process it again. If it sat out and the room was hot I would probably trash it.

I would do what Pat suggested, and boil them well before using.

Thanks Guys!

Normally I err on the side of caution. but I have a feeling these are fine. The house temp was about 72 last night and I popped them into the fridge this morning figuring I would ask you all.

I will just bring them up to a boil before using!
