Always doing laundry
I saw a recipe like this and thought I would share. It is kind of like a crustless quiche, thought it may be good for gluten free people. We tried a version of it tonight and it was yummy!
preheat oven to 350-375
grate one zucchini
cut up one small onion or half of a large one into small pieces
cut up fresh tomatoes to desired size
slice ham into chunks
chop garlic to taste
place everything in a pan with olive oil/butter, salt, pepper, desired spices and heat through
Transfer everything to a greased baking dish (I used a 9x9) and pour over enough beaten eggs to cover. (I ended up using a dozen)
bake until the egg sets, about 20-30 minutes and then top with cheese and bake until melted and bubbly.
Now, the beauty in this dish is that you can make it with anything you have on hand. If you have eggplant or peppers or spinach it would be wonderful with that. You can very easily change the seasonings to suit the ingredients. Any meat would work, I used ham cause that's what I had. If you had bacon or sausage or chicken that would work too. Whatever you would put in an omelette or a quiche would work.
You could make it mediterranean or mexican or italian depending on what you added to it. If you had some stale bread you could even chunk it up and throw that in there for a firmer texture. I also put some cheese in the mix as well as on top. Any cheese should work with this too. It can easily be a vegetarian dish.
I had 8-9 good sized portions and had enough leftover from dinner tonight to have it again for breakfast.
