Didn't ORChick post one recently? Or was it your link, BBH? I can't find a brisket, or I would've done this by now. :rolleyes: I'm drooling here. Love corned beef, hate the chemicals!

Sounds like you're telling someone off if you read that with a certain inflection! ! "Corn your own beef!"
I wish I'd thought to do this too. I love corned beef and only eat it once a year because of the yuck in it. I wonder if Whole Foods has a more natural version....

What no brisket??? That is a TX staple meat...oh, maybe that's why, the Texans are hogging it. :lol:

BBh's linked recipe is the one I am using; I have the beef in the 'fridge right now, its been there for about a week so far. Looks, and smells good.
Free, brisket is traditional, but not a requirement. Use another piece - I think I would choose a round roast, rather than chuck, as the chuck has more fat (nothing wrong with fat, but I wonder how it would react to the corning procedure). A friend is using this recipe, on my recommendation, with a piece of venison - we'll know on Thursday how it turned out.
(On my recommendation - Ha! I've never used this recipe before, and am as clueless as the next person about how it will turn out :rolleyes:)

Oh, that is good to know, ORChick! I can get other cuts of grass-fed beef that would be perfect and is reasonably priced at under $4 per pound. Corned beef, here I come. :drool
