I would like to make some cottage cheese. I was reading online and found a few recipes. The one on cheesemaking.com seemed easy enough for a beginner to follow. But, before I ordered the supplies I was wondering why they have a C101 packet listed in there ingredients. What is it? Do you use that? Any info would be great.

Thanks NC- I've made it that way before but, my husband still prefers the store bought kind. I was hoping that this new recipe might act a little more like the store bought version. Good to know about the citric acid though. I just don't really know what I'm doing so I didn't want to purchase something that was not really needed.
