I am a huge fan of imitation crabmeat. I can't afford real crab, but I'm a seafood fiend and so is the SO. We eat a lot of "krab" instead.

One of my favorite things is West Indes salad. It's heaven.
-Pile of crab or krab
-diced up sweet onion
-oil (whatever you like, I use a mild mild olive oil)
-white vinegar
-salt, a lot more than you think you'll need
-black pepper
-ice cubes

Mix things together, put some ice cubes on top, and let it sit in the fridge for awhile. The vinegar and oil will be too strong at first, as the ice cubes melt it gets it good and cold, and the dilution makes the bite of the vinegar a little gentler. I'm sorry I have no portions, most of my cooking is learned from watching someone :p
After it has sat overnight, add salt, taste, stir, add more, taste, stir, etc.
Serve on a bed of lettuce with sliced tomato and sliced avocado. My Granny serves it also with white Saltines, but I try to do without :hide

I also love cajun style krab dip, which I usually eat on celery. However, the batch I just made is gross :sick
I'm super picky about my fake krab, and this batch was not good. The best fake krab comes frozen from the Asian market. This is just from the regular grocery store cold case, and it reeks like all he** to me. I'm admittedly a seafood snoot, if it smells even a little bit fishy, I won't eat it.
I hate to waste food, think it will be ok to feed it to the chickens? The questionable ingredient is the cayenne pepper :/

Anyone else do good things with krab?

We use the KRAB in a pasta/lettuce salad with a sliced hard boiled egg, cheese, and whatever else you like. Makes a GREAT summer time dinner!!

Me and my DS love crab and krab,but there's good and bad krab.

We have a locally owned grocery store in town and they have the best krab, most of the stores carry a brand that taste like---well you can fill in the blanks.

I make lots of salads with it and krab dips or sometimes we just eat it!

We were very lucky this year my DHs company owners went over to the coast and crabbed, we got 14 very nice crab out of the deal.I have some in the freezer and keep telling DS "oh we need to get some out and eat it" but I just hate to give it up.As my DH would say'what are you saving it for"

Deb4o, you are *so* right about the krab! That should be the test for krab, if you can eat it straight it's acceptable for general consumption :gig

My dad used to get it in bulk from Chai's (an Asian market in Birmingham, AL), but now that I live an hour away from there I almost never have access to that supply. Dad would sit there with a pile of krab and a huge glob of Sriracha sauce and just go to town. I'm fairly convinced that it's the best meal around :love

Occam, there won't be any problem feeding the cayenne to the chickens. It is often used to cure worms or as a preventative.

Gotta disagree with you guys about the bestest crab...dungeness crabs are good, but they've been frozen. Ya haven't lived until you've had big blue crabs pulled out of Mobile Bay earlier that day...

I make Krab Rangoons... mmmmm....

Pulse Krab, cream cheese, green onions, water chesnuts, worcestshire (sp?), tamari in a food processor until mixed. Plop by spoonfuls into wonton wrappers, deep fry until golden and cheese melted.... dip in sweet and sour sauce and eat the whole batch :)

I love the stuff, and due to finances can't afford the real thing so I use the Krab and it works just as good in recipes... I don't think I would just eat it straight though...

Ahem, sorry about that...

When I have people over, I sometimes make crab rangoon dip. Same idea as yours, but dilute it with a can of shrimp soup concentrate, and bake 'er until pretty. Serve with the fried wontons for dipping.
