Oh, and the best rice I have ever found is Jasmine. Beats the mahatma regular stuff.

Okay...even better. Cook some rice up on a friday, to be part of supper/dinner. Save some leftover.....make a big 9x13 pan in the morning of rice pudding, raisins, eggs, etc...
This is soo delish on a frosty winter Saturday morning, baking it while everyone is still asleep. They wake up to a steamy hot bowl of rice pudding. My kids all loved it, as we lived in cold Kansas back then anyway. I would mix it up and bake it very early, as it takes maybe 45 minutes to get done.

Love creamy rice pudding, too! I use a recipe that's cooked on the stove, then I eat too much of it. :D
My daughter and I would split the whole pan...as a whole days worth of food though. :plbb
