I am getting ready to buy coconut oil, would I be better off buying 5 - 1 gallon buckets of it or 1 - 5 gallon bucket?? It is a few dollars cheaper to buy the 5 gallon bucket, but would it stay fresher longer if I had the smaller buckets??

5 one gallons. You will be much happier in the end, as you will only be exposing one gallon at a time to oxygen.

I don't think the size of packaging will affect freshness. How you store it will do that. So, perhaps 1-gallon containers would work better if you can freeze or refrigerate those not in use.
