Do you Dehydrate???

I have a Nesco dehydrator and found another really nice one at the Good Will store today. It is the 500 Watt one, looked barley used. It was priced at 7 bucks. It actually has a temp setting and all. I snatched it up like a flash.

Anyways, I guess my questions are on fruits and veggies. Well maybe not fruit but definitely Veggies.

Which do you dehydrate? Do yo re-hydrate before using? Or is it possible to just throw a bunch of miscellaneous veggies in a pot of broth and have it turn out edible?

Any advice would be great. Thanks g

I dehydrate peppers, mushrooms, tomatoes, onions, chives, garlic, green beans, corn, carrots, celery, herbs..... and am getting ready to do potatoes. I guess I dehydrate lots of stuff, actually. :D

I don't usually rehydrate before using. I use a lot of it for stews, casseroles, soups and "make a mix" recipes.

Ditto keljonma, except I haven't done beans, corn or potatoes. I have done tomatoes, garlic, and many other herbs, and a few fruits. I've made fruit leather. And I don't rehydrate either. My dehydrator has a permanent home on my wshing machine, I use it alot, and love it!

I mostly dehydrate different types of squash, tomatos and herbs because those are the things that I always seem to have such an abundance of. I will probably dehydrate peppers this year.
I don't rehydrate either. I just dump them in soups, stews and casseroles.

Kel - let me know how those taters turn out. I never thought about dehydrating them. I hope to have an abundance of those this year and was wondering what I was going to do with all of them. Now I know.

I have done carrots, onions, and potatoes so far. I turned the onions into onion flakes/powder. I want to try doing some browned ground hamburger next. I also plan on doing dehydrating peppers this summer.

I just dehydrated 10 trays of apples and my kids eat them much better than fresh apples, silly kids. I agree though, they are good.

2dream, PamsPride posted this link in her journal last week for dehydrating potatoes. This is the recipe I'm going to try this time. I will post the recipe separately.
