Okay so Im already planning for next year. But I was planning what I might do with my muscovy ducklings that the mommas will hopefully hatch. Has anyone made muscovy sausage?

Steve at Sand's poultry makes it. Looks delicious. Do a search over on BYC for "duck sausage recipe" and I bet you find it. If I remember correctly they use the thighs and legs for sausage and grill the breast.

I was wanting to make sausage from the breast and grind the rest into pet food.........
