Eggplant "chips"

Just finished making these...the recipe is also burried in my grain free thread.

Eggplant chips

slice eggplant into 1/4 inch slices
salt the slices and set on something to allow them to drain for about 20 minutes (right Dace?)
rinse the slices, pat them dry and put them on cookie sheets
season any way you want (I used onion powder, sea salt and pepper)
broil on low five minutes on both sides
drop the oven's temp to 200
let them crisp up for a few hours, turning once every 30 minutes or so (or use your dehydrator)

They taste amazing. :)

Thanks! I love eggplant and these sound amazing. What a great idea for a "chip" to munch on.

Ooohh, I bet they would be great as a layer in a casserole too.

Yes, very crunchy...and yummy!

Hint: Easy on the salt you guys, mine came out a tad too salty. Still yummy though and fantastic with dips!

I love eggplant. Thanks for this idea. (runs to peat pots to see if dadburned seeds are sprouting yet. Nope. Crap. Grabs purse, keys, headed to walmart) :lol:
