Clear varnish

How many coats of shellac would you recommend for a coffee table? And how long to let it dry between coats? In the past I never seem to let it dry long enough. And the slightest things leave ding marks.

Alder

One of the woods that gets used a lot in electric guitars is alder, and I see quite a few nicked and dented alder guitars offered as B-stock. Any ideas on how well alder finish stands up to dent or scratch repair?
