Finally got the canning nook cleaned out!

Yes, I'm showing off. We recently added hardwood flooring to our walk in. In the process we had to move some of the canned goods under the landing.

My mom and I decided that we needed to clean under it and add more shelves, clean out some of the older ones, etc.

So here it is - bit dusty on the outside, but yummy on the inside;

The area is 6 by 10(?) and 5 feet high. The shelves are three large jars wide. Ran out of shelves so the rest all stacked in boxes. Peaches, apricots, apples, raspberries, cherries, plums, pickles, relish, beets, carrots, tomatoes, and on and on. Huge assortment of jams and jellies.

Aside from some peaches everything pictured that is canned is either home grown or wild. My brilliant mother canned all of them by herself, (but some minor help from me in recent years)

We still have to go through our wine and get all that stacked in and move the potatoes and squash, etc. in, but other than that we're mostly done!

So funny you just posted this, as I was coming to this section to find the thread on canning! I might be over my fear of botulism enough to try to can this year. I'd like my pantry to look somewhat like that!

We have three other pantries, but they are for store bought stuff on sale.

So far we haven't been sick. A small portion of this is over ten years old that is still good, then rest is pretty recent.

These are all water-bath canned. My mom stopped pressure canning twenty years ago after her pressure canner exploded on her. Her clothes were basically melted and burned onto her instantly. She still has skin sensitivies to sun on her chest and face because of it.

Lookin good!!!! So did you say this area is a basement? I thought I remember you saying it was under the stairs. Anyways it looks great and so do all the canned goods. Sorry to hear about your Mom's canning accident. Just reminds us all to be very careful.

Sorry she got burned. I'm scared of pressure cookers too. :hide That's why I still haven't bought one. Did a little water bath canning though. It went fine.

Quite impressive... I have to admit, that in my family we only used water-canning, I am not even sure I know what pressure canning means :hide:

I am terrified of my pressure cooker. I get a pit in my stomach at the thought of pulling it out and using it. That sounds like quite a scary accident for your mom, no wonder she only water baths!

You stockpile of canned foods is awesome, I am completely jealous!

I've used the pressure canner once but this year I intend to make good use of it. I'll do it outside on my back porch using the propane stand for the turkey fryer. That was, if it does explode, it won't be all over my kitchen. :fl

Oh, BTW, Blackbird, all those jars full of goodies really look great! You look like you're ready for hard times.
