Made these this morning...yummy!

Fluffly Coconut Flour Pancakes

Recipe Notes: Both cow and coconut milk work well in this recipe. You can also add cinnamon or fruit as desired. Just keep the pancakes small and watch them so they dont burn.

Ingredients

4 eggs, room temperature
1 cup milk (raw cows or coconut both work)
2 teaspoons vanilla extract
1 tablespoon honey or a pinch of stevia
1/2 cup coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt
coconut oil or butter for frying
Directions

1.Preheat griddle over medium-low heat. In a small bowl beat eggs until frothy, about two minutes. Mix in milk, vanilla, and honey or stevia.
2.In a medium-sized bowl combine coconut flour, baking soda, and sea salt and whisk together. Stir wet mixture into dry until coconut flour is incorporated.
3.Grease pan with butter or coconut oil. Ladle a few tablespoons of batter into pan for each pancake. Spread out slightly with the back of a spoon. The pancakes should be 2-3 inches in diameter and fairly thick. Cook for a few minutes on each side, until the tops dry out slightly and the bottoms start to brown. Flip and cook an additional 2-3 minutes.
4.Serve hot with butter, coconut oil, honey, syrup, or fruit.

I recently started experimenting with coconut flour. Once you get over the fact you are using a million eggs to a tiny bit of flour, you can make some really nummy stuff!

mmmmm... must make pancakes.....

can i ruin all the healthy low carb and add syrup? :D I promise to add TONS of butter....

:bow o.k. great and wise ones--enlighten me,

Coconut flour, have I had my head under a rock or is this just ground coconut?

where can one get such an item? I'am thinking health food store,or can I make it by grinding coconut at home?

this has got to be great!!

and why more eggs than normal?

how good is this for me? oh really who cares if it is good for me it has got to taste great!!

Coconut flour is not just ground coconut.

You get it at health food stores, Vitamin Cottage, Trader Joe's, Etc...

Is absorbs a lot of liquid hence the extra eggs.

It is high in protein and lower in carbs than wheat so it is good for you.

Thanks Wife--but does it taste of coconut? Maybe I should just try to find it at my local health food store, and see what I think.

Maybe a little. When I make cranberry muffins, you can't taste coconut at all.

Mine did. Everyone still loved them, especially with honey and butter. YUM!

(Come to think of it, I used coconut oil to grease the pan, so I don't know if it was the oil or the flour that produced the taste.)

I've made these 3 times now. Still love them obviously...I just wanted to let anyone else who is interested in making them know a few things:

1. The coconut taste comes from the coconut oil I used on my cast iron skillet. I used bacon fat today and I didn't taste any coconut. They were still fantastic--just not coconutty.

2. Whip the eggs in a big bowl even though the recipe says small bowl. You want to get a lot of air into the eggs, so a big bowl is a must if you are using a wisk. (Maybe a hand beater would work in a smaller bowl, idk.) The extra air in the eggs is what makes the pancakes fluffy. I can get 7 more pancakes out of that recipe just by whipping them really well.

3. Cook these on med low heat or else they will get too brown before they are ready to be flipped.

4. B/C they are touchy when being flipped, make the pancakes small...no matter how tempted you are to make normal sized cakes. :p Bigger is NOT better in this case.
