freezing pie crust?

I've got 2 pie crusts rolled out on wax paper. I only have 1 quart freezer bags. How do I freeze these for a week or so? Can I fold them in half and put in the bag and then just reshape when they thaw out? Do they get freezer burn? Can I put them in larger regular plastic bags or in tupperware? I've never in my life been this prepared to double my recipe. Thanks!

I'm sure other cooks here with much more experience than myself will have better notions about freezing.

But i just thought i would throw out there that when i have leftover pie dough, i usually roll it into a tight ball, saran wrap it, and refrigerate it...especially if it's only a week.

The only way i would even think about freezing rolled out dough would be IN the pie plates, then tightly wrapped in saran wrap. I wouldn't trust it to work well after thawing otherwise.

But i haven't done it, so i might be wrong.

Since I ferment my dough and grind the wheat and all that stuff, it is a bit of extra work and planning so I make a bunch and freeze them. They do break but can be pressed back together easily. So they aren't as pretty, but hey, pie doesn't last more than an hour after baking in my house!

I fold the rolled out crust in half, putting a piece of wax paper inside the fold so it doesn't stick to itself. Then I fold it again into quarters, again putting a piece of wax paper where the crust will touch. I put that in a quart ziploc. The important part, though, is that the bags go into a box that goes into the freezer. The frozen crust is VERY fragile and will shatter quite easily, so needs protection.

All you gotta do for a week or two is, well, freeze it :p It won't get TOO freezerburned in a week even if it is just "nekkid" in the freezer. Better though to put it in a plastic bag once it is frozen, and suck the air out. Will keep that way for a good long time.

Only way I've ever done it is either freezing the crust in the pie pan, or freezing it rolled up in waxpaper; but I am sure other arrangements are possible, e.g. your folding-in-half.

Punkin' I'll remember the fridge and saran wrap for next time. I'd totally forgotten about doing it that way. I've already got these rolled out so I think I'll try Free's idea tonight. Like she said, pie don't last long 'round here and it doesn't have to be pretty. They're not for the state fair! ...yet ;)
