Freezing Potatoes

I tried home made french fries once, way back. If I remember correctly, I sliced them in my food processor, coated them in oil, laid on a cookie sheet to freeze, then put in bags.( I may have forgetotoen othere steps) I followed directions on a website. I was trying to duplicate storebought oven frenchfries. They were soggy and disgusting. The only successful frozen potatatoes I have ever had were mashed.

I watch entirely too much Food Network. But it may pay off.

I saw a special about making french fries, and they did a couple of things. They soaked the raw cut potatoes in sugar water for an hour or so, dried them thoroughly, and then kind of oil blanched them, meaning partially cooked them for just a minute or two in oil. Then on a cookie sheet in the freezer, and then in bags.

Never tried it, but they said that's how McDonald's does it!!!

but wondering, did anyone try to freeze sweet potatoes? hmm....

the link I read so long ago tells about sweet potatoes also. never noticed!!!!! LOL

Don't know if you are into canning, but canned potatoes are wonderful. They taste great, have a wonderful texture- and are almost cooked- so they are great for a quick meal....Super handy for fried potatoes.

I froze potatoes fries and cubed potatoes for breakfast this year. The FF are a bit off but the cubes are great for big family breakfast scrambles. They are blanched before freezing.

Thinking of doing sweet potatoes as well. guess I should go read the link.

I don't like sweet potatoes and neither does kiddo....but Tony loves them big time so I have to put a mess up for him cause he just loves them mashed with cinnamon/sugar/honey. yea I know HAHA

I used to wonder why store bought frozen french fried were so white...
tryed dehydrating some got black spots too

TIP!!!!!!
when you slice potatoes put directly in cold water
then blanch in boiling water...
now you don't want to cook thease so they go to mushy so whatch
when you get a nice white foam patch on top drain and rince under cold water too stop the cooking process
the white is the starch that makes potatoes go black
now freeze or dehydrate (my tip 4 great scaloped potatoes...is to put thease in a floured and buttered rue pot...boil then with milk(heavy cream if you can)...drum roll my secret ingredient...a jar of chicken broth....soooogoood....
