I have several cookbooks for all kinds of mixes in jars. I thought that with the holidays coming up I would share some of my favorites.

Country Six-Bean Soup mix

1/2 cup dried red beans
1/2 cup dried navy beans
1/2 cup dried pinto beans
1/2 cup dried baby lima beans
1/2 cup dried kidney beans
1/2 cup dried Great Northern beans
2 bay leaves
2 Tbsp dried minced onion
1 Tbsp dried parsley flakes
2 tsps beef bouillon granules
1 tsp dried minced garlic
1 tsp dried thyme leaves
1/2 tsp dried oregano leaves
1/2 tsp black pepper
1/4 tsp red pepper flakes

1. Layer beans in a quart jar. Slide bay leaves down the side of the jar. Place all of the seasonings in a small snack size storage bag and squeeze the seasonings into the jar on top of the beans. Close jar

2. Cover top of the jar with fabric and tie securely with raffia or ribbon. Attach the following written recipe

Country Six-Bean soup Mix

1 jar country six-bean soup mix
4 to 5 cups water
1 28 oz can diced tomatoes with italian seasonings
8 oz smoked sausage links, sliced or 2 smoked ham hocks
hot sauce or red wine vinegar (optional)

1. Remove seasoning packet and bay leaves, set aside.
2. Place beans in a large bowl, cover with water. Soak 6 to 8 hours or overnight. Drain beans, discard water.
3. Combine soaked beans, water, tomatoes, sausages, contents of seasoning packet and reserved bay leaves into Dutch oven. Bring to a boil over high heat. Cover, reduce heat and simmer 1 1/2 to 2 hours or until beans are tender. Season to taste with hot sauce or vinegar, if desired.

Note: For thicker consistency, mash beans slightly with a potato masher.

1/8 tsp salt
1/3 cup powdered sugar mixed with 1 tsp cinnamon

Those are wonderful !

You know, a couple of years ago I had a side business where I made and sold mixes in country fabric bags at home parties. My most popular was for what I called PMS Fudge because you can make it in like two minutes and that's too long when you are PMSing.

It's just a microwave fudge that uses 1 pound of powdered sugar and like 1/3 cup cocoa powder, then nuked with 1/4 milk and half a stick of butter...vanilla...nuts...I can't remember it exactly. But was was really good !

I'm doing some experiments with the tons of dry beans I have on hand. Since most of the dry bean gift jars call for soaking the beans on the instructions (as well they should) Here's what I'm doing to make them really convenient.

I soaked the beans in water with a glorp of whey (that word just sticks in my head, free) for 24 hours, and cooked them until they were just barely done, plain, no salt. Then I stuck them in the dehydrator for about 8 hours. After they were dry, I layered them in a jar with dried onion, celery, bell pepper, rice & seasonings. I'm going to leave the one jar I made under the counter for about 3 weeks and see what it turns out like.

Dace was talking about it earlier so I thought I would just go on and start a thread. Keljonma posted some cappucino recipes on Dace's journal but maybe she'll put them here too. I thought some of these were kind of different, not what you usually see.

You can turn almost any recipe into a jar mix if you just separate the wet and dry ingredients.

Oh, and I added the instructions in a way that you could just copy and paste them over and over on a document and print them out and just cut them apart and punch a hole in it or glue it to an index card! :D

This is a great idea!!
I am dehydrating a lot of my vegies, I bet I can use them in some of these recipes also. Most of my friends and family love getting food stuff from us. I am always looking for new ideas.

Fixing things up in a jar and making it pretty is great idea, to give to folks who are busy with jobs and kids. We all can use a simple to fix meal every now and then.
I was also thinking of making some of the mixed seasoning recipes as gifts that were listed here a while back. I think kejonma posted them.
Print out the directions on pretty paper and we will all have some pretty nifty gifts this year.
