gluten free pot luck dishes?

Okay, so here's the deal. One of our deacon's at church has been handling the music program for get this, 30 yrs. We are having a pot luck lunch in his honor following sunday service 2 weeks from now.

The choir is handling the meat, which means they will go get fried chicken from Food Lion. :rolleyes:

Do you guys have any easy gluten free pot luck type dishes that I could whip up the night before so I can eat something?

Unstuffed cabbage rolls :drool

This is a basic recipe that I play with - I use my homemade chili sauce instead of regular tomato for more depth of flavor.

Unstuffed Cabbage Roll Casserole

1 medium head of cabbage, thinly sliced
2 lbs. lean ground beef
1 medium onion, chopped
1 T. Worcestershire sauce
salt & pepper, to taste
3/4 c. Minute rice
2 (8oz) cans tomato sauce
1 (15 oz) can diced tomatoes

1 (14 oz) can sauerkraut, drained and rinsed well ...(optional)We like it better without the sauerkraut.....

Preheat oven to 375

Spray medium sized roaster with cooking spray.

Cover bottom of roaster with 3/4 of the sliced cabbage.

Brown hamburger and onion, until hamburger is cooked through and the onion is tender. Drain excess grease. Add 1 can of tomato sauce, Worcestershire sauce, salt, pepper and rice. Stir to combine and pour over cabbage.

Cover beef mixture with remaining cabbage. Pour diced tomatoes with their juice over the cabbage and top cabbage with sauerkraut. Pour remaining can of tomato sauce over the sauerkraut, cover roaster with foil and place in oven.

Bake for 1 1/2 to 2 hours, or until cabbage is tender and most of the moisture is absorbed.

A broccoli rice casserole is nice too.
Or hash brown casserole. I don't have a recipe for it, but google does ;)

Or broccoli salad - broccoli florets, chopped onion, diced cheese, and mayo to taste.

Hamburger casserole

1 pkg GF noodles cook according to directions
2 cans GF stewed tomatoes
1 can gf cream of mushroom soup ( I use progresso and add corn starch to thicken it
1 lb hamburger cooked
1 chopped onion
1-2 chopped green pepper(depending on size)
Shredded Cheddar cheese to top it off before putting in oven @ 350 till cheese is bubbly
salt & pepper to taste


easy and can me made in quantity to freeze a second, third, ect, dish to have as easy quick meal or quick pot luck dish. Just skip the cheese and add after cooked/thawed then put cheese on bake till bubbly.

Are you looking for a hot dish or something that can be eaten at room temp?

A GF pasta salad with veggies and some bits of salami & cheese would be easy

Spinach salad with bacon :drool

Deviled eggs can carry me thru a meal :p

Or if you want something hot...

Arroz con pollo

Or some sort of stew...just use GF flour to brown your meat

AT this point anything really.

Wednesday nights we always have a dinner before classes and I can never go cause I can't eat anything they serve. It's $5 per person.

I want to make a few dishes that I know I can eat. I'll probably do some sort of dessert, and then one or two side dishes.

I may do mashed sweet potatoes, hadn't thought of that one.

I worry about the diabetics too....a lot of the meals aren't geared toward anyone with special diets. A lot of fried chicken, spaghetti, chicken nuggets, fish nuggets, pizza, that type of thing. :sick

You could always do up a big pot of spaghetti using GF noodles.

I guess I am not sure if you are just bringing a single serving for your self or setting our a large dish for all to share....I guess that would make a difference,

Chili is easy to make a large batch of.

coleslaw, broccoli salad, devilled eggs, nacho dip ( the layered kind with soucream , cream cheese, taco seasoning (homemade of course cuz store bought has gluten in it.) with shredded lettuce salsa and cheese on top, served with corn chips. Hummus with veggies , wontons, cheese tray, pickle tray, fruit salad

I love potlucks, unfortunately, I never know what to bring either. :D
