Taken from "Dairy Goats a beginner's handbook" by Jackie Clay
:

I developed this recipe and method for making goat milk ice cream because I didn't have an ice cream maker and we really wanted some ice cream--and we lived 50 miles from a store, so it would have melted before we got it home, anyway.
This is what I did:

2 Quarts cold, fresh goat milk
1/2 cup sugar (or to taste)
1 tsp. vanilla
1 cup (or more) fresh fruit

Mix ingredients either in a blender or with a mixer in a large bowl. If using a blender, just whiz the first ingredients until mixed well, then add the fruit and just pulse until slightly chopped, or to a texture you like.

Cover the bowl and set in the freezer. When just beginning to freeze, mix again well, then return to freezer. When almost frozen, whip up well and serve. This makes a soft-serve type ice cream that we really like. You can also add some cold milk and make a great milk shake.


We made this last night, using strawberries. Apparently we should have done it earlier because we forgot about it all in the freezer until today. We thawed some out and had a bit, and my mom and I really liked it. Its not like store bought at all, but it is still very yummy and a heck of a lot healthier I am betting. I'm not really a picky ice cream eater, so I can easily get used to this sweet frozen treat :p

oh that sounds yummy

I'll have to add it to all the other recipes I'm collecting, to help use up all the goats milk I hope to get, as soon as I get my new goat.

Could one use goats milk in any recipe that calls for cows milk?
Like making a custard and then turning it into ice cream in my ice cream maker?

And while Iam here BB does one milk a goat twice a day?

I use goat's milk in any recipe calling for cow's milk, even cheese recipes. Expect a richer product, as whole goat's milk is richer than whole storebought cow's milk in general. Pudding......ooolala!

You can milk twice a day for more milk or once a day, the once a day method is described at www.fiascofarm.com. Read everything on this site ten times before getting your goats, and ten times again after getting them!

Doing this tonight! I need to use up some of this goats milk! Dh is currently working on my cheese press and I'm trying to figure out a few ways to do yogurt without a yogurt maker so ice cream is next on the list!! :D

I was wondering if you could make ice cream w/goat's milk, and now I know! Wonder how it would taste w/raspberries and chocolate chunks. (Any one have any spare goat's milk I could use to try this? :hide)

Kala, do a search for yogurt on this site. Lots of us make yogurt, and only a few use a yogurt make.
