Graham cracker crust substitute

I want to make a chevre cheesecake for the first time, but won't buy graham crackers anymore, so I need a substitute using whole wheat flour.

I have soft white, hard white, and kamut.

I'm thinking of maybe making a batch of shortbread in a cake pan and then just making the cheesecake on top of it.

Whatcha think? Any other ideas? I'm hoping to make it on Friday or Saturday.

No flour recipe here, but here is a fabulous sub.
Use the Graham Cracker crust recipe, but sub in crispy pecans, chopped up, in place of the graham crackers.
The rest of the recipe stays the same, except you can use good real raw sugar rather then white.

Real cheesecake never did use a graham cracker crust - old fashioned baked cheesecakes used a flour crust. :)


1 stick butter
4 tbsp. sugar
2 eggs, beaten
2 c. flour
1 tsp. baking powder

Typically, 2/3 of this is pressed into the bottom of a springform pan, and baked at 400 degrees for about 7-10 minutes (until just barely starting to brown). It is cooled, and the other third is pressed around the sides, the filling is poured in, and it is re-baked until the filling is set.

I think you can probably play fast and loose with the sugar, and have it still turn out ok. The eggs would hold it together.

Oooo, that's a keeper, lwheelr. Like shortbread but with eggs, so it will be more of a cookie crust. I don't own a springform pan, so I can just use a regular round cake pan, right? That is what I'd use for the graham cracker crust if that is what I was making.

I'm allergic to nuts, but otherwise, the nut recipes sound scrumptious! :drool

Oh, poor thing :hugs
I would much rather be allergic to nuts though, then gluten.

Oh, I meant to add, that oatmeal cookie dough makes really good crust too :drool
