Okay....I got it out of her!

Make the dough at night so it can sit in the refrigerator overnight.

Dough:

about 3 cups of self-rising flour sifted
1 stick of butter
1-2 cups buttermilk
solid crisco
oil

Filling:
any kind of fruit cooked down until thick and pureed. She started with dried apples this time and boiled them in water until they got soft and then pureed them in the blender and then put them back in the pan to cook down until they thickened with any desired spices.

Okay, here goes....

for the dough cut one stick of butter into the sifted flour until it forms "peas". Start with one cup of buttermilk and work it in until it forms a soft dough, add more milk if needed and you'll probably need 1 1/2-2 cups to get it right. Granny gets it soft enough that she has to use a spatula to scrape the bowl and transfer it to the oiled bowl. It's very soft and sticky.
roll the dough in a bowl that has been coated with oil and then put the dough into the fridge to chill and set up overnight.

In the morning, prepare your filling. Roll the dough out and cut into circles with a 7 inch pot lid. Place the filling on one side and brush the edge with water, fold over like a taco and seal the edges. Melt a chunk of solid crisco in a small cast iron skillet and fry one at a time until the pie is crisp and brown, drain on a paper towel.

This recipe will make around 9 fried pies. Can you tell she's country??? :love

QA has been talking about wanting fry pies. She needs to get over here.

And somehow, someway this makes me think about the hobo pies we used to make over the campfire. Use bread for the crust in the pie irons and fill with everything from pizza stuff, to breakfast stuff, to pie filling, to pudding. YUM

Lori, thank you a million for that recipe. My mom use to make these when I was a little girl. She quit making them when she started working when I was about 9. Now she is gone and I never got around to learning how to make them.

She says that dough is also good for biscuits too but you have to get it a little firmer when you roll it out and sprinkle extra flour to get them to biscuit consistency.

She also says that if you don't want to use butter you can substitute 1/2 stick of butter flavored crisco. :)

She is also, in addition to being addicted to crisco, addicted to butter flavored pam. She buys it by the case, sprays it on everything. :p
