A recipe dh and I have been making for years with our garden produce.

Green Bean Salad

Cook fresh green beans al dente, drain and toss with several chopped cloves of garlic, lemon juice, salt, pepper and EVOO. Alternately, add chopped garlic, and sprinkle vinaigrette dressing on top.

Place on top of fresh lettuce. Sprinkle with feta or blue cheese, if desired. Top with some freshly chopped tomatoes.

Can be set aside for up to 15 minutes before serving.

This sounds very good!! I'm picturing it with a boiled egg or 2 and fresh zucchini bread, hot out of the oven :)

My recipe is very similar, though I will let it sit in the fridge as long as overnight. Thats just the green beans with the dressing.

I have never tried it on salad, or with feta. I'll have to try it.

I'm having this right now for lunch! I used goat cheese crumbles, it was all I had on hand.

Thank you for sharing, it is perfect for a hot afternoon.

Next time I think I will add crispy bacon pieces...:drool
