DH picked up a meat grinder at a thrift store today, so we can grind some of our own burger. I was just wondering what type of fat should we mix with it? We have some beef & venison that we'd like to make into burger, but I can't remember what type of fat is used. Suet? or something else??

Thanks to all :frow

Emeril Lagassi always says: PORK FAT RULES!

Seriously though, we use pork or beef fat with our venison. I personally prefer the pork.

When I do deer burger all I mix with it is the fatter beef hamburger or beef roast.
I have tried suet and pork ect and the best I have found is just the fatter beef products mixed with it.

Pork fat is the best IMO. But, if you can get something else easier and cheaper it won't make a *huge* difference.

You simply have to try some with bacon ground up in it, it makes the best burgers & hamburger steaks.
In case you couldn't tell, I'm with SKR8PN & pat, pork fat is the bees knees.

We went to the butcher and requested beef fat but they were out so we got pork fat instead and it was just fine.

If you buy lard from the store, read the label CAREFULLY. Avoid anything that says "partially hydrogenated".
