I thought I had asked this before but couldn't find it in the search. I'm dying for canned peppers again, and still cannot get the recipe out of the clenched fists of the ex-boyfriend or his mother. I DO know that you cut the peppers into rings (sweet banana peppers) and there is olive oil and ketchup in it. They taste sweet when finished, so maybe there's sugar in it? While it's canned and in the pantry, it's a nice orangish color through and through (the sauce), but once you open and refridgerate it, the sauce seperates. Anyways, anyone have any ideas on what could be in it? I don't see any flakes of herbs or anything in the sauce... I've done a bazillion google searches, and just can't seem to find anything that strikes me.

I'm still at a complete loss here. Still no response from the ex's family or anything. And no body I've ever asked has any idea what else could possibly be in it!!! :(

Have you ever found anything similar sold commercially? If so, it might be worth your while to buy a jar, and (as my DH puts it) reverse engineer the process. Use the ingredient label, your tastebuds, and your knowledge of healthy cooking to make something similar. DH is always bragging about the "reverse engineered" recipes that I come up with.

I will plow through my books and see if I can find something that looks like a match. I have a meeting today, so it might be this evening or tomorrow before I get through all of them.

Found online for you,not sure if this is close but here goes. States it is an old Italian favorite recipe
Peppers in red sauce
60 banana peppers
4 cup vegetable oil (probably was Olive oil originally)
4 cup white vinegar
64 oz ketchup
2 cup sugar
4 tbsp pickling spices (possibly put in cheesecloth and removed before sealing jars to mimic your remembrance of recipe?)
1 tbsp salt
Directions

Wash pepper and vertically slice them -- some people like to cut them in rings. and stuff in sterile jars.
Add ingredients in large sauce pan and bring to boil (probably 5 minutes or more). Pour over peppers in jars (1 inch headspace). (Here is where I would process the jars) Listen for the pop!

This canning recipe needs to be adjusted to safe canning practices IMHO but sounds close to what you are talking about.

http://www.pickyourown.org/canningpeppersinoil.htm Here is a university tested recipe for comparison with using oil.

Honestly I have never made this recipe, just found it to be hopefully what the original poster was looking for but I imagine it would need the heat from some peppers to offset the sweet of the ketchup and sugar.
