Homemade Chalupa's!

So, I've been such a slacker lately that I've even made the guys eat storebought bread :sick Guilt was getting to me, and I found this easy chalupa shell recipe *on another blog* :hide and I decided to treat them!

2 1/2 C AP flour
1 T baking powder
1/2 t salt
1 T shortening ( I used butter)
1 C milk

Mix dry ingredients. Cut in shortening. Add milk. shape into a log. Cut into 8 pieces. Roll each piece into a circle. Fry in hot oil in a good sized pan (I put a couple inches of oil in my cast iron fry pan) and fry on both sides until golden brown but still flexible. Fill like a taco and eat.

The poster on the other blog said they weren't very good as left overs, but 'they' obviously hadn't spent any time down in TX! :lol: As a great left over treat: spread lightly with soft butter. Sprinkle on cinnamon and sugar (or honey), cook 5 minutes at 400 in toaster oven. Mmmmmm, tasted just like a bunuelo!

I accidentally made some of those one night :p I used self rising flour in place of AP flour in a tortilla shell recipe and it came out better than tortillas :drool They are very yummy! I haven't tried them with butter sugar and cinnamon...I'll make a mental note of that one :D
