Finally something I can post about!! I've been reading posts for several weeks but since I'm such a newbie to self sufficiency I've had nothing insightful to say about anything. :eek:)

I recently made jam using Pamona's Pectin and honey. We experimented with low sugar, honey, half sugar/half honey. The kind that tasted the best was definitely 100% honey!

I did read a little about the Pamonas. I have been using the Ball or Sure-Jell no sugar needed powdered pectin. Seems to be a similar product.

I just needed to wrap my head around the stuff to honey to liquid to pectin relationship. I seem to have gotten it on the pepper jelly.
