My mom made this awful grainy hot chocolate mix when I was a kid. It didnt mix well and the cocoa settled to the bottom of the mix - and the cup.

Since then I've been fussy about hot chocolate mix and havent been happy with them. I finally figured it out. Here are 2 recipes. Second one is diabetic / keto friendly.

1-1/2 cups heavy cream powder
1/2 cup caster sugar
1/3 cup cocoa powder
1/8 t salt

I mix in a power blender. Use 1/4 cup mix with 1 cup hot milk or hot coffee.

1-1/2 cups heavy cream powder
1 cup confectioners erythritol
1/3 cup cocoa powder
1/8 t salt

Mix this in a power blender - the confectioners erythritol will clump otherwise.

Mom likes coffee creamer powder for hers. i am good with powdered milk, cocoa and sugar mixed together. no salt added as i think powdered milk is salty enough for me. i like mine also with a lot less sugar so the major flavor is the cocoa and just a hint of sweet.
