How do you separate cream from milk?

To separate ALL of the cream, you do need a cream separator, which are pretty spendy..

However, I usually just collect my cream by letting a jar sit undisturbed in the fridge for a week or more, that way I can collect at least an inch or two of cream at a time. You can leave the jar on the counter as well, the warmer it is, the faster the cream rises. Another way I collect cream when I need a lot is that I put the milk on a shallow tray, or a cake pan type of container. I find the cream rises up easier because it has less milk to travel up through.

i've found, with cows milk, that it separates pretty fast and overnite you can get some good stuff. there seems to be a line between getting all the cream you can.. and getting enough before it starts to get funky.

you can also pour the milk into one of those spigots-at-the-bottom-of-the-tea-jar-thingy's and then you can pour the milk out and are left with the cream.

whatcha makin'? butter perhaps??

We were talking about goat butter, which is a difficult and delicate operation, especially if one doesn't have a cream separator. Also if one walks away from the stand mixer and it becomes butter suddenly and the buttermilk flies all over the kitchen!!!! :p
