Ideas for using re-hydrated black eyed peas?

I re-hydrated these with a nearly 24 hour soak....I was going to make a salad recipe with them but now I am looking for something else...not sure what. Any body got a favorite use for BYPs?

Blackeyed peas cry out for bacon or ham.

Make a hoppin-john type thing by sauteeing a buncha bacon (whatever kind) and onions and then adding yer peas and cooking liquid, some seasonings and maybe (heretically) some greens of some sort towards the end.

Or they make marvellous soup when boiled up with a hambone or smoked ham hock (pick the meat off the bone at the end and shred into the soup; onions and whole garlic cloves are good in this too)

A little bacon... okay a lot of bacon :lol: , tiny bit of salt, pepper, garlic & hot pepper sauce (the vinegar from pickled peppers). Served over rice or couscous (or your favorite grain/base) Cook with just the bacon til almost tender, then add the other ingredients & cook til done.

Mix them into mac & cheese (Yes I still make this, but its from scratch with real cheese, not the blue box stuff! :sick )

Hoppin John: Equal amounts of peas, corn & tomatoes. Cook the peas til almost tender, preferably in broth. Add the corn & tomatoes. Bring to a boil. Add garlic, thyme, salt, pepper, onion, and celery to taste. Cook until the peas are tender. Adjust seasonings, add hot sauce if you like. Serve over rice, couscous, whatever.

FYI, don't add the salt until the peas are almost tender or they could be tough.

This is AWESOME:

Spicy Bean Salsa
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
1/2 teaspoon garlic salt

In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors.

I vote bacon bacon bacon, but not any brand, use :bow Wrights brand it is thick cut and smoked to perfection. Its the best bacon ive ever tasted and from Alabama ive had them all. It will make them peas sing hallelujah. ive got some drippings from wrights just for peas beans and greens. :p

For adding in to recipes, I buy bacon ends and pieces. Albertson's has smoked bacon ends and pieces for only $1.67/lb. I used it to make jalapeno poppers the other day. Last week I cooked fresh green beans in bacon grease and added the cooked ends and pieces. DELICIOUS.

Oh I have some beautiful green beans on hand...i usually do a quick sautee in butter, squeeze in some lemon and pig out. Bacon sounds mighty yummy...think I will give that a try tonight!

Beans have been WAY CHEAP at the farmer's market lately. I am going for more on Saturday.
