Since I've gotten more into the self-sufficient lifestyle, my sister ordered a book for me, called "Country Wisdom and Know-how...Everything you know to live off the land." It's a very large (the size of a newspaper) paperback, and it's full of all the self-sufficient stuff anyone could ask for. I've been browsing through it a lot.
I got to the "meat and game" section. Although I'm no hunter, I was fascinated by the recipes for preparing and serving not only deer and squirrel, but muskrat, opossum, porcupine, racoon, and woodchuck. I dunno...has anyone ever eaten porcupine?! Apparently woodchuck needs to be parboiled because it's got a very strong flavor, but muskrat "has a sweet flavor."
It sure is nice to know that I have a resource if things get really tough. But somehow I don't think I'll be trying opossum very soon...
