kefir whey questions

I am making kefir cheese (like yo cheese) for the very first time. Is it all whey and no cheese, or what?! I had a 12 oz glass of kefir, grains removed, set aside to make cheese (primarily to harvest the whey).

Well WHEY is what I've got the most of and now I have a golf ball sized blob of kefir cheese that is still loose and dripping a-whey (pun). When I make yo cheese, I get a nice, firm ball of cheese when it is all done. Is that ever going to happen with the kefir? (At this rate, I will get a shot glass size of kefir-cheese.)

(I am using a large square of t-shirt material and have it bound and hanging over a crock to catch the whey.)

If this is normal, than it seems very logical to use kefir to harvest whey rather than yogurt.

You got it, BBH! It is normal, and kefir is a fantastic source of whey, rich in useful and healthy bacteria. The kefir cheese is good, too. I've made dips and salad dressings with it....yum!!!! I usually strain a quart, and get a small blob of cheese to use. :p
