Kefiring Raw Milk

I bought some raw milk this weekend and was really excited to make kefir.

I just went to start a new jar and when I pulled the grain out the raw milk was thicker on top but still milk below. Did I do something wrong? Does it take longer than with commercial milk?

I use raw milk, but I do mine in small batches. It usually takes about 24-36 hours depending on the temp in the house. You might want to poke your grain down to the bottom.

A layer of cream forms on the top of mine and I just mix it in after the milk has kefired.

Traditional kefir-making was done in a skin bag tied in the doorway. Everyone was to agitate the bag as they went through the doorway. So I try to remember to invert the jar now and then as I go through my day in the kitchen. Not a vigorous shaking, just a little movement/mixing of the milk.
