Kumquat Salad

Made this last night as well.....it was really well received. The kumquats added a lovely burst of citrus! really yummy :)


Kumquat Salad
Serves 4
Ingredients
1/3 cup extra virgin olive oil
1/3 cup red wine vinegar
1 teaspoon brown sugar
1/4 teaspoon freshly ground black pepper
5 ounces mixed baby greens
2 green onions, chopped
1/2 cup chopped celery
1 carrot, julienned
1/2 cup broccoli florets
1/2 cup cauliflower florets
1 avocados - peeled, pitted and diced
1 teaspoon fresh lemon juice
2 ounces grated Asiago cheese
3 ounces pine nuts
4 ounces kumquats - rinsed, seeded and sliced

Directions
1. To prepare the dressing, place extra virgin olive oil, red wine vinegar, brown sugar, and pepper in a small container with a lid. Shake well to blend.
2. In a medium bowl, toss together baby salad greens, green onions, celery, carrot, broccoli, and cauliflower. Sprinkle avocado with lemon juice, and toss into the mixture. Sprinkle mixture with Asiago cheese and pine nuts. Toss in kumquats. Serve with the olive oil dressing.

Tamlynn.... no, I get them at the farmers market. I have never loved them on their own, but they were great in a salad!

I adore kumquats but people always look at me funny when I pop them into my mouth skin and all.

That sounds very yummy but it'd be about 1.5-2 days' worth of my food budget just in that one dish -- things must be a LOT cheaper in California! :p

For my class I needed 9oz of pine nuts and in the bulk bin the cost $31.99 per pound! I found some prepackaged that were cheaper and only used 2/3 of what the recipe called for and it was plenty.

So... sub in any nut that you have on hand, and any hard cheese that you have on hand....the avos are nice, but not necessary.

Take you basic green salad, add some veggies for crunch and a handful of slices kumquats for a great sunshiney taste.
