Hope your cake turned out yummy. It sounds good. I did not know there was coconut flour.

I tried to make a dobos tort,which is the hungarian 7 layer cake. My version turned out ok,and atleast I saved the $35 charged for the cake! Next time it will be better!

Right now dd wants me to bake some ginger snap cookies,and ds got some dark chocolate brownies.Me, I prefer a simple banana/raisin muffin!

Coconut flour is high in fiber and lower in carbs than wheat flour. It's great for people who have gluten or blood sugar issues. Abi made some mini nut breads with it for me last month. Mmmmmmm!! Good stuff. I just recently bought 2 bags of it.

I also keep almond flour on hand. Another good low carb gluten free option.

Okay, 1/2 cup flour just doesn't sound like enough. I've never worked with coconut flour, though, to know if that makes a difference. And 6 eggs sounds like an awful lot for a cake - or is that how you're getting the volume? And how many cupcakes does it make?

Coconut flour soaks up A LOT of liquid. Most coconut flour recipes (like abi's nut bread) use a ton of eggs and only a little flour.

That is one of the things that makes this flour so good for low carbers. You don't use a lot and you boost your fat and protein intake with all those eggs.
