Looking for a low carb-ish dessert

Hubby's bday is this weekend and I need a dessert to bring to the family BBQ.

I'd love some lower carb ideas, preferably gluten free. I am thinking a cheesecake with maybe an almond or macadamia nut/coconut crust might be interesting. Any ideas on how to make that less carby?

Any other suggestions are welcome too!

Low carb cheese cake is a good one. make it all the time. I use almond meal and butter to make the crust.

My mom makes a fabulous nut an gluten-free bread crumb cheesecake crust. But she won't share the recipe. :( It is to die for!

I know the "bread" crumbs are from all her gluten-free baking experiments that don't turn out right. :gig She breaks them into crumbs and freezes them for use in her cheesecake crust.

It is so yummy and nutty... pure heaven.

How about using a nut flour... bind it with egg? and some butter? Mmmm.... yummy experiments. :)

dace, i'm about to run to the museum :D but i'll post the recipe after work tonight. it's a vanilla cupcake with the egg whites separated and whipped to give it lightness instead of flour and stuff.

it's really really nummers.

It is!!! She used that as a base in a trifle she made for her room mate. It was very nom!!!

GF???

I need to make DD7 a yellow cup cake with choc frosting and sprinkles :rolleyes: to match treats being brought in to the classroom on Tues. I am grateful that the mom gave me advance notice so that DD's treat can at least look like everyone else's though.
